EASTON — 4 Sisters Kabob & Curry food truck, located at 600 Dover Road in Easton, recently opened their doors in Easton, featuring authentic Indian and Pakistani cuisine for those thinking outside the culinary box.

The food truck, an addition to 4 Sisters Halal Meat and Groceries, offers appetizers including Vegetable Samosas and Chana Chaat; traditional dishes including Chana Masala, Alo Palack and Goat Karahi; and desserts including Mango Lasi and Kheer.

Shahida Perveen, the mother of the four sisters and matriarch behind the food truck and the business, wanted to open up a food place that represents her Middle Eastern culture. Originally from Pakistan, Perveen learned how to cook at the age of eight, and took the cooking genetics from her dad, who was a chef for an American Embassy.

“It is in her blood. She’s the oldest out of all of the brothers and sisters, she use to take care of everything in the house, so feeding her little brother and sisters, and then feeding her relatives and her four daughters,” said Andleeb Khan, co-founder of 4 Sisters Kabob & Curry food truck. “My mom has been a cook professionally and has done catering for her side job, trying to make a little bit of extra money while she tried to keep her full time job.”

The food truck idea started when Perveen and Khan were sitting at the grocery store, and decided to do some cooking to see if the customers liked it; and the idea bolstered from five customers an estimated 100 people, according to Khan.

That is when they started looking at places to see, but could not find any spaces in town that fit with their vision. Perveen suggested a food truck, and that idea molded where it could be an addition to the store.

Perveen and Khan started looking into getting a loan from banks, who were being difficult throughout the process.

“No bank really wanted to help us, and that was a turn down for us,” Khan said. “Nobody wanted to take us serious, even after we have a business and you know we have this up and running by ourselves, burrowing money from any banks and getting any loans, nobody worked with us at all.”

A gleam of hope rose after a customer told them that Sprouts was selling their food truck. Although the food truck was $72,000, Perveen and her family came up with half of the money to pay through savings and with the help of family for the truck, and worked out the rest with Sprouts owner Ryan Groll.

“We are here now and we are ready to serve anybody here who loves authentic Indian and Pakistani food,” Khan said. “We are here to serve them all no matter what color you are, we love everybody, in our eyes everybody is the same color.”

Khan said that when her mother goes into the kitchen, she goes with the flow by putting in the ingredients her way, without any measuring cups. When she came up with the menu, Perveen wanted to use her culture as well as leveling out the amount of spice to cater to everyone’s palette.

“We had to hold back on the chili and level it out. A lot of the dishes that we cook now, they are very mild, very spice friendly. Mind you there are some customers that love the spice that is why my mom always keeps a sauce that she makes,” Khan said. “She keeps it all authentic, all of her home recipes is the stuff that what we grew up on. She doesn’t like short cuts, she takes all of the ingredients, grinds them up and keeps them in her spice box.”

With the opening of their food truck, Khan and Perveen have future plans to open a restaurant, a main idea they had in the beginning. Khan also said that she would like to include the remaining three sisters into future business plans. Her sisters are: Shanza Khan, 21, who attends University of Maryland; Areej Khan, 19, attends Washington College; and Bushra Khan who is in ninth grade.

“Five years from now, we are looking into expanding. Since there is four sisters, we want to have four restaurants, so you know each for all,” Khan said. “If there is not four restaurants, there will be four something. we are hoping the restaurant will be the first one to start the field and maybe my sister will want to do something in business, so something for everybody.”
